Snow is falling almost invisibly, like drizzle, yet suddenly I notice the snow is becoming thick on the grass. The mild spice in this Japanese noodle dish is like that: you aren’t conscious of its heat until you realize you are warm from the inside out. While this recipe is usually eaten in the summer because it is served cold or at room temperature, the pepper makes you forget about the chill.

Summer Noodles: Hiyashi Chuka Soba
It’s summer, and that means refreshing chilled noodles—just as it did last year! My advice is to make twice as much sauce and keep it in the fridge for spur of the moment meals. It will keep for several days in the refrigerator. And if you have a variety of vegetables and some sort of protein, all you have to do is cook and rinse the ramen noodles.

Crisp Chuka Soba with Vegetables and Seafood
I remember my mother at the kitchen table having a coffee klatch by phone with my aunt, snacking on a slice of homemade cardamom bread and she’d say, “This tastes like more!”
This simple meal, with shrimp, sweet peas, crunchy and soft noodles is like that—”This tastes like more!.”
