Although package mixes are convenient, they might not capture the true flavor of pajun. Sun-Young Chang’s A KOREAN MOTHER’S COOKING NOTES has some good simple recipes for various Korean pancakes. There’s one that I like to adapt using green onions, eggs and flour.
