Sweet Potato Cake, take 2

Japanese sweet potato cakeI originally made this recipe in December. The flavors of the rich sweet potato and tart apple sauce were very nice, but my cakes were misshapen. This time I cut back on the amount of liquid in the cakes, and while I still could not form the cakes by hand, I used mini-cupcake papers to contain them. I also made less applesauce, because there was just too much. (original amounts are in parenthesis)
