INGREDIENTS
- 1 cup mirin
- ½ cup sake
- ½ cup soy sauce
- ½ cup sugar
- 2 green onions
- 2 akatogarashi (Japanese dried red chile peppers)
or 1½ teaspoons red pepper flakes
INSTRUCTION
Combine the mirin and sake in a small pot over medium heat. Bring to a simmer. Add the soy sauce, sugar, and green onions. Simmer gently for 8 minutes, covered. Remove from the heat to cool. Remove the green onions. Add the peppers. Store in a glass jar with a firm lid for up to 6 months in the refrigerator.
